Mother’s Day is the perfect day each year for showing your love to one of your favorite women. It honors the woman who makes her family the center of her world. It’s her day to sleep in, relax in bed or enjoy some peaceful solitude. Make sure she starts her day off right by preparing a special brunch just for her. Bring her a tray filled with her favorite morning treats to enjoy propped up in bed, or set a photo-worthy table where she can spend a leisurely brunch with family and friends. Frittata

This classic egg dish is simple, nutritious and easy to customize for Mom – and everyone else in the family too. Combine eight large eggs with a mixture of your mom’s favorite vegetables, meat and cheese. Add salt and pepper to taste. For a richer frittata, add 1/2 cup of heavy cream to the mixture, or lighten the dish by making it with egg whites instead of the whole egg. Pour into an oven-safe, non-stick or cast-iron skillet and cook until the bottom of the eggs set (about five minutes). Then, transfer the pan into an oven heated to 350 degrees Fahrenheit. Cook until the surface sets and forms a golden-brown color. Try a combination of cherry tomatoes, scallions and cheddar cheese or a blend of sausage, kale and mushrooms. Keep it simple with smoked provolone and spinach. Tomatoes, black beans, green onion and cooked corn add a tasty Southwest twist. You can even have kids choose ingredients for mini frittatas so, Mom gets to sample all of their favorite flavor combinations.

Pancakes

Weekend mornings and pancakes go hand in hand. Show mom how much you appreciate those syrupy stacks she used to make for you. Follow the directions on the back of your favorite pancake mix or make your own from scratch. Mix together 1 cup each of flour and milk. Add 2 tablespoons of baking powder, one egg, salt and 2 tablespoons of oil. Pour the batter on a hot griddle greased with butter. Cook until you see bubbles form on the top of the pancake. Flip and cook the other side. For a boost of vitamins, add some chopped fruit (like blueberries, strawberries or bananas) to the batter before cooking. Or, get fancy when you plate the pancakes. Spread a layer of nut butter or chocolate spread between pancakes. Top a stack with fresh fruit and drizzle with honey and top them with walnuts.

Glazed Bacon

Add savory bacon to your brunch spread. This year, put a sweet twist on this breakfast favorite by giving it a sweet maple glaze. Just place strips of bacon on a baking sheet lined with parchment paper. Cook it in the oven at 400 degrees Fahrenheit until the bacon starts to brown in 15 to 20 minutes. Then, brush the cooked bacon with maple syrup. Put it back in the oven for a few more minutes, so the syrup gets sticky and turns to a golden glaze.

Yogurt Parfait

Even the youngest children can help put together Mom’s brunch when you make parfaits together. Give them clear, tall glasses, vanilla yogurt and assorted fruits and nuts to layer inside. Have fun experimenting with flavor combinations. Stick with a simple pairing of berries and granola, or opt for a more exotic flavor with passionfruit, bananas and coconut. Pair pineapple and strawberries with pistachios. 

Churros

If you’re looking for Mother’s Day brunch ideas with some extra flair, serve her sweet churros for breakfast. A traditional treat in Spain and Portugal, these pieces of fried dough sprinkled with cinnamon and sugar start the morning off right. They’re also delicious dipped in coffee. Gather 1 1/2 cups each of water and flour, 1 teaspoon of baking powder, 1/2 cup of white sugar a pinch of salt and 1 teaspoon of olive oil. Heat the water, sugar, salt and olive oil in a saucepan. Add the flour and baking powder. Form the mixture into a ball. Using a pastry bag, place a strip of the dough in hot oil and fry until the sides are crispy. After draining the pastry, roll the pieces in sugar and cinnamon to coat them. You can also capture the flavor of churros by sprinkling waffles with cinnamon and sugar. Serve with a side of hot chocolate in a festive mug.
